Taste of Marwar – On the Jodhpuri Cuisine Trail

What this tour is about: The dry desert region of Marwar has scanty rainfall. The sandy soil and absence of widespread large scale irrigation has resulted in rain-dependent, seasonal agriculture. This in turn has led to the evolution of a unique cuisine, one that is based on harvesting the produce of the desert, drying and storing it for use in the summer season when fresh produce is scarce. Marwari cuisine is also characterised by the use of milk and milk products, as well as various legumes and pulses. The Marwaris also have a sweet tooth.

On this tour, we will walk through a local bazaar with a Food Guide, for an introduction to the unique cuisine of Marwar. We will look at all the local specialities offered in the markets, including Jodhpur’s popular street snacks.

After the walk, we will visit a local home for an interactive cooking session, followed by lunch. You can choose to participate in the cooking, or merely watch and photograph it. Please note, this cuisine is vegetarian.
